Combine bread flour, yeast, salt, sugar, lukewarm water, lukewarm milk, and oil in a bowl. Knead for 5 minutes until smooth and elastic; the dough should feel soft but not sticky.

Cover the bowl and let the dough rest in a warm place for 10 minutes. Meanwhile, heat the oven to 240°C, or its highest setting, with a heavy baking tray inside.

Mix the grated mozzarella and crumbled feta. Keep the mixture fairly coarse so it melts unevenly in a traditional style.

Divide the dough into two equal pieces. Roll each into an oval about 25 cm long. Roll the long edges inward, pinch the ends together, and open the centre to form a boat shape. Transfer each boat to baking paper.

Fill both dough boats evenly with the cheese mixture. Slide them, still on the baking paper, onto the hot tray.

Bake for 10 to 12 minutes, until the crust is deeply golden and the cheese is fully melted, bubbling, and lightly browned at the edges.

Remove the breads. Make a shallow well in each centre, crack half the egg into each well, and return to the oven for 1 to 2 minutes, just until the whites are barely set while the yolks remain runny. Add half the butter to each hot centre.

Serve immediately. At the table, stir the butter and runny yolk vigorously into the molten cheese, then tear off pieces of crust and dip them into the centre. For food-safety reasons, use pasteurized eggs and avoid the traditional runny yolk for pregnant, elderly, or immunocompromised diners.
