- •For an especially quick version, use 400 g cooked lentils and simmer them with the tomatoes and stock for just 8 to 10 minutes.

Rinse the lentils thoroughly in a sieve and drain. Wash the lemon in hot water, finely grate the zest, then squeeze out the juice.

Heat the olive oil in a large, deep skillet. Sauté the onion, carrots and celery over medium heat for 4 minutes, until the vegetables begin to soften.

Stir in the garlic and cumin and toast for 30 seconds, until fragrant. Do not let the garlic brown.

Add the lentils, chopped tomatoes, vegetable stock, salt and pepper. Bring to a boil, then cover and simmer gently for 16 to 18 minutes, stirring occasionally. The lentils should be tender but still have some bite; add a little water if needed.

Fold in the spinach and cook for a further 2 minutes, until wilted.
