Place the vegetables in the middle of the hot oven and roast for 15 minutes, turning once after 10 minutes, until they are soft and lightly browned at the edges.

While the vegetables are roasting, bring a large pot of water to a boil, add salt to the water, and cook the pasta al dente according to package instructions (approx. 9–11 minutes).

Drain the pasta and reserve 120 ml of the cooking water; briefly place the hot pasta in the skillet or a large bowl.

Remove the roasted vegetables from the oven and add them along with balsamic vinegar and the reserved pasta water to the pasta, quickly mix everything to emulsify the sauce; season with more salt/pepper if needed.
